Ingredients
- 1 Can Pumpkin Puree
- 2 Eggs
- 1/4 C Maple Syrup
- 1/4 C Milk
- 1 Tbs Lemon Juice
- 1/2 tsp Salt
- 1.5 Tbs Pumpkin Pie Spice
- 2 C Vanilla Greek Yogurt
- Granola for Topping
Instructions
- Pre-heat oven to 350°.
- In a large bowl, combine everything except yogurt and granola.
- Stir thoroughly until combined.
- In a prepared baking dish, bake pumpkin mixture for 30 minutes.
- Allow to cool before layering with yogurt.
- Top with granola just before serving.
Serving Tip: Pre-portion these into individual servings for easy snacking and busy mornings!
