Perfect for breakfast, or as a snack, this super simple caprese cottage cheese toast comes together in less than 5 minutes, and always hits the spot.
Ingredients
- 1 slice of bread toasted – I like to use some sort of whole grain, rye, or olive bread.
- 1/4 C Cottage Cheese – I especially like the Good Culture cottage cheese since it’s so high in protein.
- Thinly sliced red onion – as much or as little as you like.
- Sliced tomato
- Garnish as desired – I love to drizzle mine with balsamic vinegar, and put a nice coating of fresh cracked pepper as well as fresh basil.
I also suggest topping cottage cheese toast with melons and strawberries, or cucumber, radishes, and smoked salmon. It’s also fun experimenting with different flavors of vinegar. Cottage cheese toast can be sweeter, or savory. While we focused on a savory option in this post, consider a cottage cheese toast with watermelon and basil drizzled with coconut vinegar. A toast with blueberries, walnuts, chia seeds and drizzled with honey would also be outstanding. More savory options could include, a cottage cheese toast with red onion and salmon. If you were really feeling fancy, you could top with a sunny side up egg – the yolk would be a positively decadent addition to any cottage cheese toast. The possibilities are endless.
